I am changing my header to New Year, New Diet. By that I don't really mean diet - I mean more like New Year, New Eating or New Year, New You, or New Year - Lose that Big Butt.
So while I'm not necessarily going to blow it out over the next few days I AM going to get ready - get my fridge in order - get my house in order - get my mind in order to get healthy and make it a good start in this new year.

I forgot
I did make up this great sandwich one night after getting home late from the gym...
As soon as I got home from work I baked some chicken breasts in Teriyaki sauce, cracked black pepper and sea salt. They cooled while I was at the gym and when I came back I used them for the following.
1/2 baked chicken breast
1/2 whole wheat pite
Provolone or swiss cheese
Mayo and/or mustard
2-3 Cherubs (cherry or grape tomatoes)
Pepper relish or spicy olive relish
Warm the pita in microwave for about 30 seconds to soften. Put mayo or mustard in pita and lay slice of cheese in. Slice the chicken breast into thin slices and stuff in pita. Slice Cherubs and dump in and finally add pepper relish (I use Potbelly Peppers) or spicy olive relish. Enjoy! It's my favorite sandwich ever (so far)!

Black Bean Wraps
These are such a staple in our house we have them several times a week. High in protien, spicy and delicious. The black bean is another of nature's perfect foods :-)
Start with the "salsa" if you can call it that. My mom invented this when she was living in NC and she and my dad would eat Mexican and they tried to make the salsa by taste. We LOVE this stuff as an alternative to Pico and Pace, etc. You can use Pace or other favorite salsa in place.
1 large can of stewed tomatoes
1/4 cup of crushed red pepper flakes - top off with garlic powder
Blend until smooth and add garlic salt to taste
Set aside
2 tbsp olive oil
1 clove of garlic (or one tbsp of minced garlic)
1/2 tsp cumin
2/3 cup of above salsa
1 can black beans
Flour tortillas
Sour cream
Shredded cheese
Shredded lettuce
Add olive oil and pressed or minced garlic to skillet. Heat skillet to medium until garlic starts to cook. Add rinsed black beans and 2/3 cup of salsa, stir. Add 1.2 tsp cumin and stir. Continue to cook over medium heat and stir until mixture thickens and salsa cooks down. Spread sour cream (optional) on tortilla, add bean mixture, top with cheese, lettuce, tomato, jalapeno, etc to taste. Wrap like a burritto or serve like a soft taco. The original recipe calls for chicken and if I have time I shred grilled chicken and add to the tortilla.
